6 links Smoked DJ’s Boudain
6 slices jalapeño pepper cheese, halved
2 sheets frozen puff pastry, thawed
Egg wash
Option 2: Original (or other non-smoked flavor)
4 links Original DJ’s Boudain
6 slices mild Cheddar cheese, halved
2 sheets frozen puff pastry, thawed
Egg wash
Yields: 48 bites
Smoked DJ’s Boudain Kolache Bites
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Place a puff pastry sheet on a clean surface and cut in half along the short side. Repeat with the second sheet to make 4 pieces total.
- Line halved cheese slices down the center of each piece of dough.
- Remove casing from the Smoked DJ’s Boudain. Trim rounded ends and place boudain on top of cheese, using about 1½ links per pastry piece. (Save extra ends for boudain dip!)
- Gently stretch dough edges, brush with egg wash, and roll tightly over the boudain, sealing seams well. Flip seam-side down.
- Cut each roll into 12 pieces (about ¾ inch each). Place on prepared baking sheet and brush tops with egg wash.
- Bake for 20 minutes, or until golden brown.
- Serve warm with your favorite dipping sauce. Green onion dip is a great choice!
Original DJ’s Boudain Kolache Bites
Follow the same steps above, with these adjustments:
- Use 1 link per pastry piece.
- After removing the casing, gently mold the boudain to the full length of the dough with flattened edges before placing it on the cheese.
