DJ’s Boudain Kolache Bites

Ingredients

Option 1: Smoked
6 links Smoked DJ’s Boudain
6 slices jalapeño pepper cheese, halved
2 sheets frozen puff pastry, thawed
Egg wash

Option 2: Original (or other non-smoked flavor)
 4 links Original DJ’s Boudain
6 slices mild Cheddar cheese, halved
2 sheets frozen puff pastry, thawed
Egg wash

Yields: 48 bites

Smoked DJ’s Boudain Kolache Bites

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Place a puff pastry sheet on a clean surface and cut in half along the short side. Repeat with the second sheet to make 4 pieces total.
  3. Line halved cheese slices down the center of each piece of dough.
  4. Remove casing from the Smoked DJ’s Boudain. Trim rounded ends and place boudain on top of cheese, using about 1½ links per pastry piece. (Save extra ends for boudain dip!)
  5. Gently stretch dough edges, brush with egg wash, and roll tightly over the boudain, sealing seams well. Flip seam-side down.
  6. Cut each roll into 12 pieces (about ¾ inch each). Place on prepared baking sheet and brush tops with egg wash.
  7. Bake for 20 minutes, or until golden brown.
  8. Serve warm with your favorite dipping sauce. Green onion dip is a great choice!

Original DJ’s Boudain Kolache Bites
Follow the same steps above, with these adjustments:

  1. Use 1 link per pastry piece.
  2. After removing the casing, gently mold the boudain to the full length of the dough with flattened edges before placing it on the cheese.
