DJ's Boudain Corn Dip

DJ's Boudain Corn Dip

Creamy, cheesy, and loaded with DJ's Boudain, this slow cooker dip is the perfect addition to your next cookout, tailgate, or holiday gathering.

Ingredients

  • 2 cups prepared Corn Dip
  • 3 DJ's Boudain links, removed from the casing
  • 4 oz Cream Cheese, cubed
  • ½ cup shredded Pepper Jack Cheese
  • 2 tbsp Sour Cream
  • 2 Limes
  • 1 cup Green Onions, sliced, divided
  • 1 cup Cilantro
  • Chili Powder
  • Cotija Cheese

Directions

  1. Remove the boudain from the casings and crumble it into a 2-quart slow cooker.
  2. Add the prepared corn dip, cream cheese, pepper jack cheese, sour cream, juice of 1/2 lime, 1/2 cup green onions. Stir to combine.
  3. Cover and cook on HIGH for 2 to 3 hours, stirring every 30 to 45 minutes if possible, until the dip is hot and reaches an internal temperature of 165°F.
  4. Top with the remaining cotija cheese, green onions, lime juice, and a light sprinkle of chili powder.
  5. Switch the slow cooker to WARM and serve with tortilla chips or Fritos Scoops.

Texture Tips

•    Too creamy? Add a 1/2 link of boudain. 
•    Too thick? Stir in 1-2 tablespoons of milk. 
•    Needs more elote flavor? Add the cotija, lime juice, and green onions. 

Shortcut Tip

Using already cooked boudain? Crumble it into the slow cooker with the remaining ingredients and cook on HIGH for 30 to 45 minutes, stirring once or twice, until the dip is hot, creamy, and the cheese is fully melted. Garnish with the remaining cotija, green onions, and chili powder, then switch the slow cooker to WARM for serving.
