DJ's Boudain Breakfast Sandwich

  • 8 Large Eggs
  • 1 pack DJ's Fancy Rice Dessing or 4 links of Boudain (Original or Jalapeno)
  • 8 Southern Style Biscuits (Regular, Butter, or Honey Butter)
  • 8 Slices of Cheese (Cheddar or Pepper Jack)
  • Vegetable Oil
  • Salt and Pepper
  • *Optional Jelly.


  1. Follow instructions on biscuit can or make your own homemade biscuits.
  2. To form patties with DJ's Fancy Rice Dressing: Cut block in 1/2 inch widths. Press the dressing together to form a tight patty.
  3. To form patties with DJ's Boudain Links: Score boudain link with a knife and remove the cased. Break the link in half to form one patty.
  4. *Keep a clean counter by cutting rice dressing in the packaging. Use a silicone egg ring to help shape consistently sized patties. This also helps patties remain intact while cooking.
  5. Cover a large skillet with a think layer of vegetable oil on medium-high heat. Cook boudain patties until golden brown on both sides.
  6. Reduce heat to low heat. Fry eggs until over easy or your desired style.
  7. Cut biscuits in half. On the bottom half: place one boudain patty, a slice of cheese, and a fried egg on the bottom half. Add top biscuit to make a sandwich.
  8. *Optional: Serve with jelly.

Makes 8 sandwiches.
