DJ's Boudain Corn Dogs
Ingredients:
Corn Dog Mix:
- 1 1/2 cups yellow cornmeal
- 1 1/4 cups all-purpose flour
- 1/4 cup sugar
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 1/2 cups milk
- 1 Tablespoon vegetable oil
Corn Dog Assembly:
- 1 package 6oz DJ's Boudain Links
- 7-inch wooden corn dog sticks
- Vegetable Oil for frying
Directions:
- Begin heating a large pan of vegetable oil.
- Crack egg into a large mixing bowl and beat with fork until smooth.
- Add all liquid and dry ingredients of the corn dog mix. Stir with fork until smooth.
- Pour the batter into a glass. This makes it super easy to coat the link.
- Remove the casing from the boudain links then gently push the wooden skewers about three-fourths of the way through them.
- Coating the link with just a little flour also helps the batter stick. You can do this by rolling the link around a plate of flour. Dust off any excess flour.
- Once your pan of vegetable oil reaches 350 degrees, coat the link with the corn dog mix by lowering the link into the cup of corn dog mix.
- Transfer directly to a pot of oil. (It's okay to drop the whole stick into the oil!) Fry the corn dogs for about 3 minutes turning as needed until they are golden brown.
- Carefully remove with tongs and place on a paper towel-lined plate. Repeat until all the corn dogs are made and fried.
- Optional: Serve with optional toppings such as mustard, hot pepper jelly, queso, etc.
